This is a delicious and versatile dressing. It is great for pasta, green salads or drizzles over green veggies to punch up the flavor. This is easily made in advance or you can just whip it up right before you serve your meal.
1 egg
1 small onion quartered
2 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 pkg. Ramp It Up Cooking ™ Ramp Dip Mix
1/4 cup white vinegar
1 cup olive oil
Add to blender first 7 ingredients and blend well. While blender is still running drizzle in 1 cup of olive oil very slowly until all oil is added and dressing is think and creamy.
Pour dressing into a screw top jar and refrigerate. Makes approximately 1 3/4 cups dressing.
