This ramp rub was inspired by a Tuscan spice rub. It is very aromatic with the ramps, basil, garlic, rosemary and oregano. It is especially good on chicken thighs, salmon steaks or chops.
6 tablespoons dried basil
3 tablespoons garlic powder
3 tablespoons coarse salt
2 tablespoons dried rosemary
2 tablespoons dried oregano
2/3 Cup Kosher Salt (or to taste)
Mix well. This is enough rub for approximately 20 lbs. of poultry or meat. This is especially nice on turkey and pork. Pat dry poultry or meat and apply by rubbing into meat. Put in large plastic zip lock or roasting bag and close securely. Put into container with a side and refrigerate for 10-12 hours. Take out of bags and cook accordingly.
